Misono knives are born in the Gifu prefecture of Seki City in Japan, a historical centre for blade smithing with a history in the craft dating back 800 years. The company itself was established in 1935, originally producing vegetable peeler blades, while the first knives were produced in the late 1960's.

Every year Misono's 50 skilled craftsmen will produce over 150'000 high quality kitchen knives for distribution all over the globe. Unlike many companies which outsource some aspects of their production, Misono's knives are completed entirely in house, ensuring perfect continuity of quality control and product integrity from start to finish.

Misono's production process retains many of the traditional techniques used for blade smithing developed over centuries, as well as incorporates modern technological advancements in production methods and metallurgy and even a few proprietary processes. So committed is the company to its own unique methodology, that visitors are never permitted on site.

Misono boasts 7 product lines, featuring 4 different steel types, including a line made in collaboration with sharpening Master Shouzou Mizuyama. As a testament to the company's commitment to its customers, many varieties are available in left handed models by special order through knives for chefs.

Misono knives are recognised for their durability, agility, ergonomics, balance as well as superb fit and finish. They are also one of the few producers of principally western handled knives in Japan​​​​​​​.
